Dr Michael U, Ukwuru Research Interest and Biography Research Interest My research interest is in the area of Food and industrial microbiology and food safety. Currently, I am working on the development of starter cultures with a view to enhance the quality of some commonly consumed traditional fermented foods in Africa. These foods are spontaneously fermented coupled with poor handling. This results in products with variable qualities and residual toxicity. The use of an appropriate starter culture for their fermentation will generally improve their overall qualities. Biography I am Dr Michael U Ukwuru from Obi Local Government Area of Benue State, Nigeria. I was born on December 30, 1962. I had my primary and secondary education between 1967 and 1981. I went to the Benue State Polytechnic, Ugbokolo, Benue State, Nigeria, from 1984 to 1990 where I obtained a National Diploma (ND) and Higher National Diploma (HND) certificates. I proceeded to University of Nigeria , Nsukka, Nigeria, to obtain a Post Graduate Diploma in 1999 and MSc in 2006 all in Microbiology. After that, I obtained a Ph,D (Food Microbiology) from Michael Okpara University of Agriculture, Umudike, Abia State, Nigeria, in 2016. I also hold a Post Graduate Diploma in Education in 2007 from the National Teachers’ Istitute (NTI), Kaduna, Nigeria, and a registered member of the Teacher Registration Council of Nigeria. I Started work with the Federal Polytechnic, Idah, since 1994 where I have risen to the post of a Chief Lecturer. Currently I am the Head of Department of the Department of Food Science and Technology, Federal Polytechnic, Idah, Kogi State, Nigeria. I have published many articles in both local and international journals. I have also attended and presented papers in many national and international conferences. I have reviewed manuscripts for many international journals. I serve as an Academic Editor to the European Journal of Nutrition and Food Safety. I was a former Editor-in-Chief of Journal of Applied Science and the Environment – a local Journal that I developed for our Polytechnic. I am a member of many professional bodies which include Nigeria Society for Microbiology (NSM), Nigeria Institute for Food Science and Technology (NIFST), Society for Occupational Safety and Environmental Health (SOSEH), American Society for Microbiology (ASM), Society for Applied Microbiology (SfAM) and International Association for Food Protection (IAFP). I am married with four children- Sandra, Allen, Edmund and Jonathan.
